Overview of the Role
Rooted in a respect for Scotland’s culinary heritage and a thoughtful approach to service the Food & Beverage Manager brings every dining and beverage experience at The Birnam Hotel to life. Whether in our Rohallian Restaurant, the Lounge Bar or during in house events they guarantee that every guest experience is seamless, welcoming and full of character. Working closely with the Head Chef and General Manager, this role will take care of Scotlands seasonal, locally sourced ingredients, including produce from our vegetable garden, are presented and served with care, precision, and warmth.
They oversee the smooth running of front-of-house operations, including staffing, reservations, room service, billing, and service standards, coordinating across departments to deliver experiences that are effortless, memorable, and deeply personal. With a business minded approach and operational expertise, they will monitor performance, manage costs, and ensure the highest standards of hospitality, while maintaining a culture of pride, collaboration, and excellence among the team.
Key Responsibilities
Lead the full kitchen operation, setting and delivering the culinary vision for Rohallion Restaurant and the wider hotel.
Create and evolve seasonal menus rooted in soulful Scottish folk food, guided by local produce and tradition.
Recruit, train, and lead the kitchen team, building a positive, skilled, and motivated team.
Oversee the day-to-day running of the kitchen, maintaining high standards of food quality, organisation, and cleanliness.
Manage ordering, stock control, and supplier relationships to achieve strong GP performance and minimal waste.
Take ownership of key kitchen KPIs, including GP targets, labour budgets, and food safety compliance.
Work closely with the Food & Beverage Manager and senior team on operations, events, and service delivery.
Play a key role in the setup and opening of the kitchen, including input into design, recruitment, and operational planning.
Collaborate with the Walled Garden team to showcase garden-grown produce across menus.

Qualifications & Experience
Proven experience in a Food & Beverage Manager or senior F&B leadership role within a luxury or boutique hospitality setting.
Strong financial and operational management experience, including budgeting, forecasting, and reporting.
Strong knowledge of food safety, hygiene, licensing, and health and safety standards.
